Crockpot Buffalo Chicken Soup We turned a favorite appetizer into a zesty and comforting slow-cooker soup! Combine cream cheese, hot sauce, chicken, onion and celery in a slow cooker, then cook until creamy and tender. Stir in even more cheese and serve with garnishes of fresh celery, pepper sauce and blue cheese crumbles for a complete dish. Ingredients of Crockpot Buffalo Chicken Soup

  1. It's 2 packs of chicken thighs (skinless / boneless).
  2. You need 1 can of low sodium chicken broth.
  3. You need 1 can of crushed tomatoes (28 oz).
  4. It's of Baby carrots (1 lb. bag).
  5. It's 1 of Onion, sliced.
  6. You need of Fresh garlic.
  7. You need of Black Pepper.
  8. You need 1/2 teaspoon of crushed red pepper.
  9. You need 3/4 cup of buffalo wing sauce(or a little bit more depending on how spicy you want it !).
  10. You need of Blue Cheese (for the topping).
  11. Prepare of FYI.... You can also add chopped celery to this but I didn’t add it because I HATE celery !!!! 😂.

Once everything is cooked, remove the chicken from the crockpot and shred using a fork. Add cream, cheese, and xanthan gum to the crockpot. Use an immersion blender to emulsify all of the liquids together. Place the chicken back into the crockpot and stir together.

  1. Place chicken, chicken broth, crushed tomatoes,baby carrots,onion, garlic, black pepper, crushed red pepper, and buffalo wing sauce into crockpot......Stir until chicken is coated with your ingredients......
  2. Cook on Low for 8 hours, then remove chicken to a plate and lightly shred chicken, then put shredded chicken back into crockpot... stir once every hour.....
  3. Ladle into a bowl and top with blue cheese..... Enjoy 😉!!!.
