You could also replace the maple syrup with erythritol. It's not sugar so you can use a little more of it if you for some reason need a sweeter pie.
For a gluten free pie, use buckwheat or gluten free oat flour. Also, spelt or even whole grain wheat can be used. Spelt and apples are a nice match. I've never made an apple pie using cornstarch but this worked out great because it made the sweetened spice/butter mixture stick to every single. It will require some effort to make, but the final product tastes amazing, especially when with a scoop of ice cream.
